*Without peeling them, cut the courgettes into sticks of the same size, 5-6 cm in length, depending on the size of your courgettes.
*Break the eggs and beat them in a shallow dish, then season generously with salt and pepper. Mix the parmesan and breadcrumbs, and tip the mixture into another shallow dish.
*Put the flour in a sandwich bag, add the courgette sticks and shake well until fully coated.
*Then dip each one in the beaten egg, and then into breadcrumb/parmesan mix.
*Remove the paddle from your ActiFry. Put the courgette sticks in your ActiFry pan, then brush with olive oil.
*Begin cooking for the specified time.
*Serve hot, with a fromage blanc and chive sauce or a ready-made tartare sauce.
